How to fillet a trout
We fillet trout in a very specific way, it is basically a butterfly technique. It is necessary to gut the fish exactly the way we have shown in order to successfully do this style of filleting. Please watch the video below for to see how we fillet:
**We do not require that pin bones are removed on every fish. We do recommend to take them out when fish are over 15″; meat thickness will help determine the size of the pin bones. This is also an option that is left at the discretion of the customer. Explain to them what pin bones are and let them know you would recommend they come out. Ask them if they would like you to take them out. **
